Slimming World Campfire Stew – Syn Free

A slow cooker recipe that’s delicious and filling

I heard about this recipe in our local slimming world group as the winter weather was starting to take a grip on the country. I’d heard a couple of people mention the campfire stew and, when I finally asked for the recipe, I knew it would be tasty – even if I would be the only person in the house that would actually eat it.

It’s another slow cooker recipe, so it’s one that you can put in first thing, then go spend the day with the family, before dishing out a tasty dinner.

One thing I will say though, you need a large slow cooker to make this one! The first time I made it, I only had a 3.5 litre slow cooker. This recipe completely filled it to the brim. So much so, that I had to mop up the spills from the counter periodically. For my birthday, I received a new 5.5 litre one, so I no longer have this problem at all.

This recipe is completely syn free, and can be served with either rice or slimming world chips.

Campfire Stew

Ingredients

  • Gammon Joint with no visible fat
  • 2 Onions Chopped
  • 3 Peppers Chopped (mixed)
  • 3 Garlic Cloves Crushed
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Ground Coriander
  • 1 tin Baked Beans
  • 1 tin Chopped Tomatoes
  • 1 tin Kidney Beans
  • 1 Celery Stick chopped
  • 2 Carrots chopped
  • Half Punnet Mushrooms sliced
  • 2 tbsp Tomato Puree
  • Large Pinch of Chilli Flakes
  • 1 tbsp Worcester Sauce
  • dash Hot Sauce

Instructions

  1. Add all the ingredients into the slow cooker, but save half of the peppers
  2. Cook on high, for 7.5 hours
  3. Stir in the reserved peppers
  4. Cook for a further 30 minutes on high
  5. After cooking, shred the gammon joint between two forks, stir back into the mixture and serve
