Slimming World Hunters Chicken – Syn Free
A really simple recipe, and probably one of my favourite Slimming World meals
So, with Slimming World, there’s a whole range of tasty meals that you can make yourself which are really filling and, low in syn value. This hunters chicken recipe has always been a favourite of mine. The barbecue sauce is really tasty, easy and relatively quick to make. After that, it’s simple a quick bake with your chicken, bacon and cheese and then serve.
With Slimming World, you’re allowed a minimum of 15 syns per day. Us blokes tend to get at least an extra 10. Whilst some of these syns can be used with your main meals, I like to try to find syn free recipes. I can then have my syns as treats through the night.
This recipe is completely syn free. There is a cheese top on the chicken but, this can be taken from your healthy A allowance. I’m not a tea or coffee drinker anyhow and, sometimes struggle to use my healthy A.
It’s one of the only recipes that all of our family enjoy eating together. It’s a massive bonus in our busy little household, as I’m not stood around cooking three different meals at the same time!

Hunters Chicken
Ingredients
For the sauce:
- 1 onion finely chopped
- 1 tsp mild chilli powder
- 500 g passata
- 8 tbsp balsamic vinegar
- 2 tbsp Worcester Sauce
- 6 tablespoons of artificial sweetener
- 1 tsp Mustard Powder
For the chicken:
- 4 chicken breasts
- 8 slices of back bacon
- 120 g mature reduced-fat cheddar
- Veg and chips to serve
Instructions
To make the sauce:

Peel and finely chop the onion. Put in a frying pan, sprinkle over the chilli powder and saute until soft.

Add the rest of the ingredients and stir. Keep the sauce on a medium and stir it occasionally whilst you prepare the chicken. The sauce should be reduced into a consistency like ketchup.
To make the chicken:

Pre-heat the oven to about 210C. Take four ovenproof dishes that are just large enough to serve your chicken in. Spray with Fry Light.

Slit the chicken breasts down the middle, taking care not to go through the bottom or sides. You want to end up with a pocket. Place the chicken breasts in the ovenproof dishes.

Pour the sauce over the chicken breasts, making sure it goes into the middle of the breast. Lay the bacon over the top of the chicken.

Bake the chicken for around 25 minutes. Sprinkle over the cheese, then bake for 15 minutes more.

Serve with chips and green veg
